Kumaoni Himkhadya Rai ( Brown Mustard)
Black mustard seeds are well known as rai. They are tiny little strong flavored seeds used most commonly in Indian cooking. It is used as condiment in variety of dishes. Mustard seeds, along with cumin seeds, turmeric powder, asafoetida, etc., are commonly used to temper south and north Indian foods. Mustard is tempered in curry, chutney, sambhar, and rasam. It is also used to prepare salad dressing along with vinegar or olive oil. Mustard not only stimulates the appetite but it also has digestive, laxative and antiseptic. It is a good source of calcium, dietary fiber, iron, manganese, magnesium and protein.
